Intro. I met Gabriela a few years ago, when we were both living in Valencia. We were part of the same group of friends from college, although we never became intimate. She was studying at the hotel school and at that time I barely knew how to fry an egg, but I remember that she already showed that calm, reserved character, and an almost obsessive precision to do things right. She used to be quiet while others were talking, but when she said something, it always made sense. After the race, everyone went their own way. I got fully involved in professional cooking, I went through several places in Spain and in the end I ended up traveling through Europe. Years later, a recommendation took me to Milan, for an interview in an important restaurant that was looking for a new head chef. I didn't know who was part of the team, nor did I care too much at the time; I just wanted to see if I could fit in there. But when I entered the kitchen for the first time, between the metallic noise, and the rest, I saw Gabriela.
